Featuring Tigg’s Beetroot & Honey Dressing
You will need: Goats cheese, Walnuts, Sugar, Butter, Mixed Salad Leaves, Cooked Beetroot, Tiggs Beetroot & Honey Dressing (& optional Sourdough Bread)
Instructions: Take a thick slice of goats cheese, place under the grill until the edges start to turn golden brown and the middle just starts to melt. Remove from grill while you prepare the rest of the salad. Place mixed salad and beetroot leaves on a plate, slice cooked beetroot and scatter over the leaves. Place the goats cheese on top. Caramelise a handful of walnuts, but tossing in a frying pan with a little sugar and butter until the sugar starts to melt over the nuts. Tip onto parchment paper to cool. Once cooled break into pieces and scatter over your salad. Liberally drizzle over your dressing. Best eaten with a toasted slice of sourdough!
